  1. In a large pan, heat 2 tbsp vegetable oil over medium-high heat. Add the beef and cook until browned on all sides. Transfer the beef to the slow cooker.
  2. In the same pan, sauté the onions, carrots, and potatoes for 4-5 minutes. Add in the garlic and ginger and cook for an additional minute.
  3. Add in the tomato paste and all of the spices (2 tbsp curry powder, 1 tsp garam masala, 1 tsp cumin, 1 tsp turmeric, 1 tsp coriander, 1/2 tsp cayenne pepper, 1/4 tsp cinnamon, 1/4 tsp nutmeg) and cook for 1-2 minutes until fragrant.
  4. Pour in the beef broth and 1 cup coconut milk and bring to a boil. Transfer the mixture to the slow cooker and stir to combine with the beef.
  5. Cook on low for 6-8 hours or high for 4-5 hours.
  6. During the last 30 minutes of cooking, add in 1 tbsp sugar and season with salt and pepper to taste.
  7. While the curry is cooking, prepare the rice according to package instructions.
  8. Serve the curry over rice and top with chopped cilantro and sliced green onions.

If you prefer a thicker curry, you can mix 1 tbsp cornstarch with 1 tbsp of water and add it to the slow cooker 30 minutes before the cooking time is up.
