2 onions
2 carrots
2 sticks of celery
1 bulb of garlic
1 orange
1 lemon
Olive oil
Salt and pepper

Instructions:
Start by preheating your oven to 180°C/350°F/gas 4.
Wash and dry your turkey thoroughly, making sure to remove any giblets inside.
Place the turkey on a large roasting tray and drizzle with olive oil, making sure to coat it evenly.
Sprinkle salt and pepper all over the turkey, including inside the cavity.
Take one onion, one carrot, and one stick of celery and roughly chop them. Stuff them inside the turkey's cavity along with the whole garlic bulb, halved orange, and lemon.
Next, tie the legs of the turkey together with kitchen twine and tuck the wings under the body.
Chop the remaining vegetables into large chunks and scatter them around the turkey on the roasting tray.
Place the tray in the oven and roast for 3 hours, basting the turkey with the juices every 30 minutes.
After 3 hours, check the turkey's internal temperature with a meat thermometer. It should read 75°C/165°F when inserted into the thickest part of the breast.
If the temperature is not yet reached, continue roasting for another 15-20 minutes and check again.
Once done, remove the turkey from the oven and let it rest for at least 20 minutes before carving.
