Ingredients

For the cake:

  • 500g mixed dried fruits (raisins, sultanas, currants, cherries, cranberries)
  • 175g unsalted butter, softened
  • 175g light brown sugar

Instructions

Step 1: Preparing the fruit

1. Start by placing the dried fruits in a bowl and pour over the brandy or rum. Let it soak for at least an hour, or overnight for a stronger flavor.

Step 2: Making the cake

1. Preheat your oven to 160°C/140°C fan/gas mark 3. 2. In a separate bowl, cream the butter and sugar together until light and fluffy. 3. Add in the eggs, one at a time, mixing well after each addition. 4. Sift in the flour, baking powder, mixed spice, and cinnamon. Mix until well combined. 5. Stir in the soaked fruit and chopped nuts. 6. Line a 20cm round cake tin with parchment paper and pour in the cake mixture. 7. Bake for 2 hours or until a skewer inserted into the center comes out clean.

Step 3: Making the marzipan

1. In a large bowl, mix together the ground almonds, caster sugar, and icing sugar. 2. Add in the beaten eggs and almond extract, and mix until you have a smooth dough. 3. Roll out the marzipan on a surface lightly dusted with icing sugar, to a thickness of about 5mm. 4. Use the cake tin as a guide to cut out a circle of marzipan and place it on top of the cooled cake.

Step 4: Making the icing

1. In a saucepan, mix together the icing sugar, water, and lemon juice. 2. Heat over low heat, stirring constantly, until the icing is smooth and glossy. 3. Pour the icing over the marzipan, allowing it to drip down the sides of the cake. 4. Use a spatula or the back of a spoon to smooth out any excess icing.
