For the crab sauce:

  • 1 lb fresh crab meat
  • 1 small onion, finely chopped
  • 3 cloves of garlic, minced

  • 1 tsp dried oregano

For the spaghetti:

  • 1 lb spaghetti
  • 2 tbsp olive oil
  • 4 cloves of garlic, minced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

1. Prepare the crab sauce

  1. In a large saucepan, heat 2 tbsp of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté for about 2 minutes.
  2. Add the diced tomatoes, white wine, chicken broth, dried oregano, dried basil, red pepper flakes, and salt and pepper to taste. Stir well and let it simmer for about 10 minutes.
  3. Stir in the heavy cream and let the sauce simmer for an additional 5 minutes.
  4. Add the fresh crab meat to the sauce and let it cook for 5-7 minutes, until the crab is heated through.
  5. Remove from heat and set aside.

2. Cook the spaghetti

  1. In a large pot, bring 6 cups of water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. While the spaghetti is cooking, heat 2 tbsp of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 2 minutes.
  3. Drain the cooked spaghetti and add it to the skillet. Toss well with the garlic and olive oil.
  4. Add the crab sauce to the skillet and toss the spaghetti until well coated.
  5. Season with salt and pepper to taste and add the chopped fresh parsley.
