Ingredients You Will Need

For the Puddings:

  • 350g of mixed dried fruit - including raisins, currants, and chopped apricots
  • 150g of candied peel
  • 100g of chopped almonds
  • 1 apple - peeled, cored, and grated
  • 1 orange - zest and juice
  • 1 lemon - zest and juice
  • 200g of self-raising flour
  • 1 tsp of mixed spice
  • 1 tsp of ground cinnamon
  • 1 tsp of ground nutmeg
  • 100g of brown sugar
  • 125g of melted butter
  • 2 eggs
  • 1 tbsp of honey
  • 1 tbsp of brandy or rum (optional)

For the Sauce:

  • 150g of brown sugar
  • 150g of butter
  • 150ml of double cream
  • 1 tbsp of brandy or rum (optional)

Instructions

1. Prepare the Puddings:

  1. In a large mixing bowl, combine the dried fruit, candied peel, chopped almonds, grated apple, orange zest, lemon zest, and lemon juice.
  2. In a separate bowl, sift in the self-raising flour, mixed spice, cinnamon, and nutmeg. Add in the brown sugar and mix well.
  3. Mix the dry ingredients into the fruit mixture, then add in the melted butter, eggs, honey, and brandy or rum (if using).
  4. Grease 12 individual pudding molds or ramekins with butter and line the bottom with parchment paper.
  5. Fill each mold with the pudding mixture, leaving about half an inch of space at the top.
  6. Cover each mold with a layer of parchment paper and a layer of foil, then tie with string to secure.
  7. Place the molds in a large pot or steamer and fill with boiling water until it reaches halfway up the sides of the molds.
  8. Cover and steam for 2 hours, checking occasionally to make sure there is enough water in the pot.
  9. Once cooked, remove the molds from the pot and let them cool for 10 minutes before removing the parchment and foil.
  10. Run a knife around the edge of each pudding and carefully turn them out onto a plate.

2. Prepare the Sauce:

  1. In a saucepan, melt the brown sugar and butter over medium heat, stirring constantly until smooth.
  2. Gradually add in the double cream, stirring until well combined.
  3. Add in the brandy or rum (if using) and continue to stir until the sauce thickens slightly.
  4. Remove from heat and let cool for a few minutes.
  5. Pour the sauce over the individual puddings and serve immediately.
