150g of candied peel
100g of chopped almonds

1 orange - zest and juice

100g of brown sugar
125g of melted butter
2 eggs
1 tbsp of honey
1 tbsp of brandy or rum (optional)
For the Sauce:
150g of brown sugar
150g of butter
150ml of double cream
1 tbsp of brandy or rum (optional)
Instructions
1. Prepare the Puddings:
In a large mixing bowl, combine the dried fruit, candied peel, chopped almonds, grated apple, orange zest, lemon zest, and lemon juice.
In a separate bowl, sift in the self-raising flour, mixed spice, cinnamon, and nutmeg. Add in the brown sugar and mix well.
Mix the dry ingredients into the fruit mixture, then add in the melted butter, eggs, honey, and brandy or rum (if using).
Grease 12 individual pudding molds or ramekins with butter and line the bottom with parchment paper.
