In a separate pan, melt the butter over medium heat. Add the chopped onion, ginger, and garlic, and cook until softened, about 3-4 minutes. Add the mixed vegetables and cook for another 3-4 minutes.

Add the garam masala, turmeric powder, chili powder, cumin powder, coriander powder, and salt to the pan. Stir well and let it cook for another 2-3 minutes.

In a large pot, layer half of the cooked rice, followed by the vegetable mixture, and then the remaining rice. Top with raisins and cashews. Cover and let it cook on low heat for 10-15 minutes, or until the rice is fully cooked. Garnish with chopped cilantro and serve hot.

Mango Lassi

Ingredients:

  • 1 cup mango chunks (fresh or frozen)
  • 1 cup plain yogurt
  • 1/2 cup milk
  • 2 tbsp honey
  • 1/4 tsp cardamom powder
  • 1/4 tsp saffron (optional)

In a blender, combine the mango chunks, yogurt, milk, honey, cardamom powder, and saffron (if using). Blend until smooth and creamy.

Pour into glasses and serve chilled.
