For the marinade:

  • 1kg chicken, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste

For the rice:

  • 2 cups basmati rice
  • 4 cups water
  • 1 cinnamon stick
  • 2-3 green cardamom pods
  • 2-3 cloves
  • 1 bay leaf
  • Salt to taste

For the biryani:

  • 3 tablespoons oil
  • 2 onions, thinly sliced
  • 2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1 cup chopped tomatoes
  • 1 teaspoon red chili powder

  • 1 cup chopped coriander leaves

Instructions

1. In a large bowl, mix together all the ingredients for the marinade. Add the chicken pieces and let it marinate for at least 30 minutes or up to 2 hours in the refrigerator.

2. In a separate pot, wash the rice several times until the water runs clear. Soak the rice in water for 20 minutes.

3. In a pot, bring 4 cups of water to a boil. Add the soaked rice, cinnamon stick, cardamom pods, cloves, bay leaf, and salt. Cook until the rice is 75% done. Drain and set aside.

4. In a large pan, heat oil and add the sliced onions. Fry until they turn golden brown and crispy. Remove and set aside on a paper towel to drain excess oil.

5. In the same pan, add the green chilies and ginger-garlic paste. Saute for a minute.

6. Add the chopped tomatoes and cook until they turn soft and mushy.

7. Add the red chili powder, coriander powder, and garam masala. Mix well.

8. Add the marinated chicken and cook until it is almost done.

9. Layer half of the cooked rice on top of the chicken. Sprinkle half of the fried onions, coriander leaves, and mint leaves on top.

10. Layer the remaining rice on top of the chicken. Sprinkle the remaining fried onions, coriander leaves, and mint leaves.

11. Cover the pan with a lid and cook on low heat for 10-15 minutes, until the chicken is fully cooked and the rice is done.

12. Serve hot with raita, pickle, and papad on the side.
