The Ingredients You'll Need
Crust:
2 ½ cups all-purpose flour
1 tsp salt
1 cup cold unsalted butter, cut into small cubes
6-8 tbsp ice water
Filling:
1 lb ground turkey
1 onion, diced
2 cloves garlic, minced
1 cup frozen peas and carrots
1 cup diced potatoes
1 cup chicken broth
1 tsp dried thyme
1 tsp dried sage
Salt and pepper to taste
Egg Wash:
1 egg
1 tbsp water
How to Make It
To start, make the crust by combining the flour and salt in a large mixing bowl. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Slowly add the ice water, one tablespoon at a time, until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
In a separate pan, cook the ground turkey over medium heat until it is no longer pink. Add the diced onion and minced garlic and cook until they are soft. Stir in the frozen peas and carrots, diced potatoes, chicken broth, thyme, sage, and salt and pepper to taste. Simmer for 10 minutes until the vegetables are tender.
Preheat your oven to 375°F (190°C). Roll out the dough into a 12-inch circle and place it in a 9-inch pie dish. Pour the turkey filling into the crust and then roll out the remaining dough to create a top crust. Seal the edges of the two crusts together and cut a few slits in the top crust to allow steam to escape during baking.
To give your holiday turkey pie a golden brown crust, brush the top crust with an egg wash made by mixing one beaten egg with a tablespoon of water. Bake for 45-50 minutes or until the crust is a deep golden brown. Let it cool for 10 minutes before serving.
