Ingredients You'll Need
Macaron Shells:
1 and 1/2 cups almond flour
1 cup powdered sugar
3 large egg whites, at room temperature
1/4 cup granulated sugar
1/4 teaspoon cream of tartar
1/4 teaspoon salt
1/4 teaspoon almond extract
1/4 teaspoon vanilla extract
Red and green food coloring
Buttercream Filling:
1/2 cup unsalted butter, at room temperature
1 and 1/2 cups powdered sugar
1 teaspoon vanilla extract
1-2 tablespoons heavy cream
Red and green food coloring
Instructions:
Macaron Shells:
In a food processor, pulse the almond flour and powdered sugar until combined. Sift the mixture through a fine-mesh sieve into a medium bowl and set aside.
In a large bowl, beat the egg whites on medium speed until foamy. Add in the granulated sugar, cream of tartar, and salt, and continue to beat until soft peaks form.
Add in the almond extract and vanilla extract, and continue to beat until stiff peaks form.
Using a rubber spatula, gently fold in the almond flour mixture in two batches until the batter is smooth and shiny.
Divide the batter into two bowls. Add red food coloring to one bowl and green food coloring to the other bowl, and gently fold until the desired color is achieved.
Transfer the batter into two separate piping bags fitted with a round tip. Pipe 1-inch circles on a baking sheet lined with parchment paper.
Tap the baking sheet on a flat surface to release any air bubbles. Let the macaron shells sit at room temperature for 30 minutes until a dry film forms on the surface.
Preheat your oven to 300°F (150°C). Bake the macaron shells for 15-18 minutes, rotating the pan halfway through. Let the shells cool completely before removing them from the parchment paper.
Buttercream Filling:
In a large bowl, beat the unsalted butter until creamy.
Add in the powdered sugar and beat until smooth.
Beat in the vanilla extract and heavy cream until the desired consistency is reached.
Divide the buttercream into two bowls. Add red food coloring to one bowl and green food coloring to the other bowl, and stir until the desired color is achieved.
Transfer the buttercream into two separate piping bags fitted with a round tip. Pipe a dollop of buttercream on one macaron shell and sandwich it with another shell.
Repeat with the remaining macaron shells.
