Gradually add 3-4 cups of powdered sugar to the peanut butter mixture. The mixture should be thick and able to hold its shape when rolled into balls.
Using your hands, roll the peanut butter mixture into small balls and place them on a baking sheet lined with parchment paper. Place the baking sheet in the fridge for about 30 minutes to allow the balls to firm up.
While the peanut butter balls are chilling, melt 1 bag of white chocolate candy melts according to the package instructions.
Take the peanut butter balls out of the fridge and dip them into the melted white chocolate, making sure to completely coat them. Place them back on the baking sheet to harden.
Using red and blue food coloring, create a purple color and use a toothpick to add small veins on the white chocolate coating. Place a M&M in the center of each ball to create the iris.
Once the chocolate has hardened, use red gel icing to create the bloodshot effect around the M&M iris. Let the icing dry before serving.
