1. In a pan, heat 2 tbsp of oil and add cumin and coriander seeds. Let them splutter. 2. Add in the chopped onions, garlic, ginger, and green chilies. Saute until the onions turn translucent. 3. Now, add in the chopped tomatoes and cook until they turn mushy. 4. Add in the turmeric powder, red chili powder, and garam masala. Mix well. 5. Add in the chopped brinjals and mix everything together. Let it cook for 5-7 minutes. 6. Pour in a cup of water, cover the pan and let it simmer until the brinjals are cooked. 7. In a separate pan, heat some oil and add in the mustard and cumin seeds. Let them splutter. 8. Add in the asafoetida and pour this tempering over the cooked brinjal gravy. 9. Garnish with fresh coriander leaves and serve hot with rice or roti. This green brinjal gravy is a delicious and healthy addition to any Indian meal.   • 3 cups black-eyed peas cooked, rinsed and drained, about 2 16 oz cans
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons tomato paste
