Instructions
In a large bowl, mix together the olive oil, lemon juice, minced garlic, oregano, thyme, rosemary, paprika, salt and pepper.
Add the thinly sliced meat to the bowl and make sure it is well coated with the marinade. Cover the bowl and let it marinate in the fridge for at least 2 hours or overnight.
Preheat your grill to medium-high heat. If you don't have a grill, you can also use a grill pan or a regular pan.
Remove the meat from the marinade and thread it onto skewers. If using a pan, you can simply cook the meat in the pan without skewers.
Grill the meat for about 8-10 minutes, flipping occasionally, until it is fully cooked and slightly charred.
While the meat is grilling, prepare the pita bread and toppings. Warm the pita bread in the oven for a few minutes or on the grill for a minute on each side.
Once the meat is cooked, remove it from the skewers and place it on a plate. Cover it with foil and let it rest for a few minutes.
Assemble your shawarma by placing some meat, diced tomatoes, sliced onions, and diced cucumbers on the pita bread. Drizzle with tzatziki sauce and wrap it up.
