1 tsp salt
1 cup unsalted butter, softened
1 cup granulated sugar
4 large eggs
1 tsp vanilla extract
1 cup dried mixed fruits (such as raisins, cranberries, apricots)
1 cup chopped nuts (such as almonds, walnuts, pistachios)
¼ cup candied cherries, halved
¼ cup dried figs, chopped
¼ cup candied ginger, chopped
¼ cup candied peel, chopped
¼ cup dates, chopped
1 cup fruit jam
¼ cup orange juice
Instructions:
Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and set it aside.
In a bowl, sift together the flour, baking powder, cardamom, cloves, cinnamon, nutmeg, and salt.
In a separate bowl, beat the butter and sugar until light and fluffy. Add in the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the butter mixture, mixing until well combined.
In a separate bowl, mix together the dried fruits, nuts, cherries, figs, ginger, peel, and dates.
Gently fold the fruit mixture into the cake batter until evenly distributed.
In a small saucepan, heat the jam and orange juice over medium heat until the jam has melted and the mixture is smooth.
Pour the jam mixture over the cake batter and swirl it gently with a knife.
Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Serve and enjoy your delicious Pakistani fruit cake!
