  • Coconut milk - 1 cup
  • Salt - to taste
  • Oil - 2 tbsp
  • Cilantro - for garnish

Start by marinating the fish fillets with turmeric powder, red chili powder, and salt. Heat oil in a pan and fry the fish until golden brown. Set aside. In the same pan, add more oil if needed and sauté onions, garlic, ginger, and green chilies until fragrant. Add in the chopped tomatoes and cook until they turn mushy. Then, add in the remaining spices and cook for a minute. Pour in the coconut milk and let it simmer for 5 minutes. Finally, add in the fried fish and let it cook for another 5 minutes. Garnish with cilantro and serve hot with rice or naan bread.

Soak the rice in water for 30 minutes. In a pot, boil water and cook the rice until ¾ done. Drain and set aside. In a separate pan, heat oil and ghee and sauté onions until golden brown. Add in ginger garlic paste, chopped tomatoes, and green chilies. Cook until tomatoes are soft. Add in the fish fillets, garam masala, red chili powder, turmeric powder, and salt. Cook for 5 minutes. In a separate pot, layer the fish and rice, starting with rice at the bottom and fish on top. Sprinkle chopped cilantro and mint leaves in between the layers. Cover the pot and let it cook on low heat for 10 minutes. Serve hot with raita or pickle.
