2 tbsp milk
100g mini chocolate eggs
For the buttercream:
250g unsalted butter, softened
500g icing sugar
2 tsp vanilla extract
2 tbsp milk
Food colouring (optional)
Instructions
Step 1: Prepare the cake
Preheat your oven to 180°C and line a 20cm round cake tin with parchment paper.
In a large mixing bowl, cream together the butter and caster sugar until light and fluffy.
Add in the eggs, one at a time, beating well after each addition.
Mix in the vanilla extract, self-raising flour, and baking powder until well combined.
If the batter is too thick, add in the milk to loosen it up.
Stir in half of the mini chocolate eggs into the batter.
Pour the batter into the prepared tin and bake for 45-50 minutes or until a skewer inserted into the center comes out clean.
Let the cake cool completely before decorating.
Step 2: Make the buttercream
In a mixing bowl, beat the softened butter until smooth and creamy.
Add in the icing sugar, vanilla extract, and milk and beat until light and fluffy.
If desired, add in a few drops of food colouring to create a festive look.
Step 3: Assemble the cake
Place one cake layer on a cake stand or serving platter.
Spread a layer of buttercream on top of the layer and top with the remaining mini chocolate eggs.
Add the second cake layer on top and spread a layer of buttercream all over the cake.
Use a piping bag to create a decorative border around the top of the cake.
Finish off by adding some extra mini chocolate eggs on top for a festive touch.
