Instructions
Preheat your oven to 350°F and line a muffin tin with 24 cupcake liners.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, cream together the butter and sugar until light and fluffy.
Add in the eggs, one at a time, mixing well after each addition.
Mix in the vanilla extract.
Slowly add in the flour mixture, alternating with the milk, until everything is well combined.
Add in a few drops of green food coloring and mix until the desired shade is achieved.
Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Let the cupcakes cool completely before frosting.
While the cupcakes cool, make the frosting by creaming together the butter, powdered sugar, milk, and vanilla extract until light and fluffy.
Divide the frosting in half and color one half with pink food coloring.
Frost the cupcakes with the pink frosting using a pastry bag or offset spatula.
Place a vanilla wafer cookie on one side of the cupcake for the bunny's head.
Using a small amount of frosting, stick a marshmallow on top of the cookie for the bunny's nose.
Place two chocolate chips on the marshmallow for the eyes.
Using black icing, draw on the bunny's mouth and whiskers.
Place a pink jelly bean on the other side of the cookie for the bunny's ear.
