Ingredients

Batter:

  • 1 cup dried chickpeas, soaked overnight
  • 1 small onion, roughly chopped
  • 3 cloves of garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)

Fry:

  • 1 cup vegetable oil

Instructions

  1. In a food processor, combine the soaked chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, black pepper, and cayenne pepper (if using). Pulse until the mixture is finely ground but not pureed.
  2. Transfer the mixture to a bowl and use your hands to form small balls, about 1 inch in diameter.
  3. In a deep skillet, heat the vegetable oil over medium-high heat. Once hot, carefully drop in the falafel balls, making sure not to overcrowd the pan.

  • 1/3 cup orzo you can use raw orzo or leftover cooked orzo
