1. Making the Dosa batter:
Rinse the rice, urad dal, and fenugreek seeds separately with water.
Soak the rice, urad dal, and fenugreek seeds in separate bowls for at least 5-6 hours or overnight.
After soaking, drain the excess water and grind each ingredient separately to a smooth consistency, adding water as needed.
Mix the ground rice, urad dal, and fenugreek seeds together in a large bowl.
Add salt to taste and mix well.
Cover the bowl and ferment the batter for 8-10 hours or overnight.
2. Making the Potato filling:
Heat oil in a pan and add mustard seeds, cumin seeds, and urad dal.
Once the mustard seeds start to splutter, add asafoetida and turmeric powder.
Add the chopped onion and green chili and sauté until the onion turns translucent.
Mash the boiled potatoes and add them to the pan.
Add salt to taste and mix well.
Cover the pan and cook for 2-3 minutes, stirring occasionally.
Turn off the heat and let the filling cool down to room temperature.

Heat a non-stick pan or a cast-iron griddle on medium-high heat.
Pour a ladleful of dosa batter onto the pan and spread it in a circular motion to form a thin crepe.
Drizzle some oil around the edges and on top of the dosa.
