Ingredients
For the cake:
450g raisins
350g currants
225g sultanas
150g candied peel, chopped
100g glace cherries, halved
50g blanched almonds, chopped
225g self-raising flour
1 tsp mixed spice
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp freshly grated nutmeg
225g soft butter
225g light muscovado sugar
4 large eggs
4 tbsp brandy or rum
For the topping:
225g marzipan
3 tbsp apricot jam
500g ready-to-roll icing
1 tbsp icing sugar, for dusting
Directions
Step 1: Prepare the Fruits
Start by combining the raisins, currants, sultanas, candied peel, glace cherries, and almonds in a large mixing bowl. Mix well and set aside.
Step 2: Preheat the Oven
Preheat your oven to 140°C/gas mark 1.
Step 3: Prepare the Cake Tin
Grease a 20cm round cake tin with butter and line the base and sides with baking parchment.
Step 4: Make the Cake Batter
In a separate mixing bowl, sift together the self-raising flour, mixed spice, ground cinnamon, ground ginger, and freshly grated nutmeg. In another large mixing bowl, cream together the butter and light muscovado sugar until light and fluffy. Then, gradually beat in the eggs, one at a time, followed by the brandy or rum. Slowly fold in the flour mixture, followed by the prepared fruits.
Step 5: Bake the Cake
Pour the cake batter into the prepared cake tin and smooth the surface with a spatula. Bake in the preheated oven for 4 hours or until a skewer inserted into the center of the cake comes out clean.
Step 6: Add the Toppings
Once the cake is cool, remove it from the tin and remove the baking parchment. Roll out the marzipan to a thickness of about 5mm and use it to cover the top and sides of the cake. Next, brush the top of the cake with apricot jam. Roll out the ready-to-roll icing and use it to cover the marzipan. Smooth the surface with your hands and trim off any excess icing. Use a fork to create a criss-cross pattern on the icing. Finally, dust the top with icing sugar.
Step 7: Serve and Enjoy!
Your Delia's Quick Christmas Cake is now ready to be served and enjoyed with your loved ones. This cake can be stored in an airtight container for up to 2 weeks. So, go ahead and indulge in this delicious and easy Christmas treat!
