Roasted Turkey with Brown Sugar Brine

- 2 1/2 cups kosher salt
- 2/3 cup light brown sugar firmly packed
- 1 tablespoon peppercorns
- 1 gallon water
- 1 1/2 gallons ice water
- 1 turkey 16 to 18 lb., rinsed
- 4 tablespoons unsalted butter melted

Jump to RecipeIn a small bowl, mix together the olive oil, apple cider vinegar, honey, garlic, Dijon mustard, dried rosemary, dried thyme, dried sage, salt, and pepper until well combined.
Remove the giblets from the turkey and rinse it inside and out with cold water. Pat dry with paper towels.
Place the turkey in a large resealable bag and pour the marinade over it. Massage the marinade into the turkey, making sure it is evenly coated. Seal the bag and marinate in the refrigerator for at least 4 hours, or overnight.
Preheat your oven to 350°F (175°C).
Remove the turkey from the marinade and discard the excess marinade. Stuff the cavity of the turkey with the quartered onion, lemon, and orange, along with the fresh rosemary, thyme, and sage. Truss the legs together with kitchen twine.
Place the turkey in a roasting pan and rub the softened butter all over the skin. Season with salt and pepper to taste.
Roast the turkey for 2-3 hours, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C). Baste the turkey with the pan juices every 30 minutes.
Once the turkey is cooked, remove it from the oven and let it rest for 30 minutes before carving. This will allow the juices to redistribute and make the turkey more tender and juicy.
