Ingredients:

For the tart crust:

• 1 and 1/2 cups all-purpose flour
• 1/2 cup unsalted butter, cold and cubed
• 1/4 cup granulated sugar
• 1 egg yolk
• 1 tablespoon cold water

For the filling:

• 1/2 cup heavy cream
• 1/4 cup granulated sugar
• 1 egg
• 1 teaspoon vanilla extract

For the decoration:

• Green food coloring
• Red and yellow sprinkles
• White chocolate chips

Instructions:

1. To make the tart crust, mix together the flour and sugar in a bowl. Add in the cold butter and use a pastry cutter or fork to cut the butter until the mixture resembles coarse crumbs.
2. Add in the egg yolk and cold water, and mix until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
3. Preheat your oven to 375°F (190°C) and lightly grease a mini muffin pan.
4. Roll out the dough on a floured surface until it is about 1/8 inch thick. Use a round cookie cutter to cut out circles and press them into the prepared muffin pan. Bake for 8-10 minutes, or until the edges are lightly golden.
5. While the tart crusts are cooling, make the filling by whisking together the heavy cream, sugar, egg, and vanilla extract in a small saucepan. Cook over medium heat, stirring constantly, until the mixture thickens.
6. Remove the tarts from the pan and fill each one with the custard filling.
7. Add a few drops of green food coloring to the remaining custard and mix until well combined. Use a small spoon or piping bag to create a Christmas tree shape on top of each tart.
8. Add red and yellow sprinkles for ornaments and top with a white chocolate chip as a star.
9. Refrigerate the tarts for at least 30 minutes before serving to allow the custard filling to set.
