225g Stork baking block
225g dark brown sugar
225g breadcrumbs
225g raisins
225g sultanas
225g currants
100g candied peel
100g chopped almonds
1 tsp ground cinnamon
1 tsp ground ginger
1 tsp ground nutmeg
1 tsp mixed spice
1 tsp baking powder
2 eggs
200ml brandy or rum
Instructions
To begin, you will need to soak the dried fruits in the brandy or rum for at least 24 hours before making the pudding. This will allow the fruit to plump up and absorb the flavors of the alcohol.
In a large mixing bowl, cream the Stork baking block and sugar together until light and fluffy. Gradually add in the soaked fruits, breadcrumbs, candied peel, chopped almonds, and spices, mixing well after each addition.

Cover the pot and steam the pudding for 6 hours, making sure to check the water level occasionally and topping it up if needed.

On Christmas Day, reheat the pudding by steaming it for 2 hours. Once it is warmed through, remove it from the basin and turn it out onto a serving dish.
