  2. Remove the grains and bring the liquid to a boil.
  3. Add the pale malt extract, cinnamon sticks, nutmeg, ginger, allspice, and cloves. Let it simmer for 15 minutes.
  4. Add the raisins, currants, figs, apricots, orange and lemon peel, brown sugar, molasses, and rum or brandy. Let it simmer for another 15 minutes.
  5. Remove from heat and let the mixture cool down to room temperature.
  6. Transfer the mixture to a sanitized fermenter and add enough water to make 5 gallons.
  7. Pitch the ale yeast and let it ferment for 2 weeks.
  8. Transfer the beer to a secondary fermenter and let it age for 2 weeks.
  9. Bottle or keg the beer and let it carbonate for 2 weeks.
