1 3/4 cups (200g) confectioners' sugar
1 cup (100g) almond flour
3 large egg whites, at room temperature
1/4 cup (50g) granulated sugar
1/4 teaspoon cream of tartar
1/4 teaspoon peppermint extract

1/2 cup (1 stick or 115g) unsalted butter, softened to room temperature
2 cups (240g) confectioners' sugar
1-2 Tablespoons (15-30ml) heavy cream or milk
1/4 teaspoon peppermint extract
Crushed peppermint candies or candy canes for topping
Instructions:
To make the macarons:
In a food processor, pulse the confectioners' sugar and almond flour together until well combined.
In a separate bowl, beat the egg whites on medium speed until foamy.
Add the granulated sugar, cream of tartar, and peppermint extract to the egg whites and continue to beat until stiff peaks form.
Add a few drops of red food coloring to the egg whites and gently fold it in until the desired color is achieved.
