For the pastry:
250g plain flour
125g cold butter, cubed
1 tsp caster sugar
1 egg yolk
2-3 tbsp cold water
For the mincemeat filling:
200g raisins
200g sultanas
200g currants
100g mixed peel
100g dried cranberries
1 apple, peeled and grated
Zest and juice of 1 orange
Zest and juice of 1 lemon
150g dark brown sugar
1 tsp ground cinnamon
1 tsp ground ginger
1 tsp ground nutmeg
1 tsp mixed spice
150ml brandy or rum
Method:
In a large mixing bowl, combine the flour and butter using your fingertips until the mixture resembles breadcrumbs. Add in the caster sugar and egg yolk, and mix until well incorporated.
Add in the cold water, one tablespoon at a time, until the dough comes together. Knead the dough lightly on a floured surface and wrap it in cling film. Chill in the fridge for 30 minutes.
In a separate bowl, mix together all the ingredients for the mincemeat filling until well combined. Cover and let it sit for at least 24 hours to let the flavors develop.
Preheat your oven to 180°C (350°F). Roll out the pastry on a floured surface to about 3mm thickness. Cut out circles using a cookie cutter and line a greased muffin tin with the pastry circles.
Spoon the mincemeat filling into each pastry case, leaving a little space at the top. Cut out smaller circles to use as lids and place them on top of the filling. Seal the edges by pressing them together with a fork.
Brush the tops of the pies with beaten egg and bake in the oven for 20-25 minutes, or until golden brown.
Remove from the oven and let the pies cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
