Ingredients

For the fruit mixture:

  • 500g of mixed dried fruit (raisins, currants, sultanas, cranberries, etc.)
  • 1 large apple, grated
  • 1 large orange, zested and juiced
  • 1 large lemon, zested and juiced
  • 150g of unsalted butter, softened
  • 150g of soft brown sugar
  • 3 large eggs, beaten
  • 1 tsp of vanilla extract
  • 200g of all-purpose flour
  • 1 tsp of baking powder
  • 1 tsp of ground cinnamon
  • 1 tsp of ground ginger
  • 1/2 tsp of ground nutmeg
  • 1/4 tsp of ground cloves
  • 1/4 tsp of salt

For the topping:

  • 100g of marzipan
  • 500g of white fondant
  • 1 tbsp of apricot jam
  • 1 tsp of water

Instructions

1. Prepare the fruit mixture

In a large mixing bowl, combine the dried fruit, grated apple, orange zest and juice, and lemon zest and juice. Stir well and let it sit for at least an hour to allow the fruit to soak up the juices.

2. Make the cake batter

Preheat your oven to 150°C and line a 20cm round cake tin with parchment paper. In a separate mixing bowl, cream together the butter and brown sugar until light and fluffy. Gradually add in the beaten eggs and vanilla extract, mixing well after each addition.

In another bowl, sift together the flour, baking powder, cinnamon, ginger, nutmeg, cloves, and salt. Slowly add this dry mixture to the wet mixture, mixing until well combined.

Next, add the soaked fruit mixture to the cake batter and stir until evenly distributed.

3. Bake the cake

Pour the cake batter into the prepared tin and smooth out the top with a spatula. Bake for 2 hours and 30 minutes, or until a skewer inserted into the center comes out clean. Let the cake cool in the tin for 15 minutes, then remove and let it cool completely on a wire rack.

4. Decorate the cake

Roll out the marzipan and place it on top of the cooled cake. Then, roll out the white fondant and drape it over the marzipan. Trim off any excess fondant and use your hands to smooth out any bumps or wrinkles.

In a small bowl, mix together the apricot jam and water. Brush this mixture over the top of the fondant to give it a shiny finish.
