1/4 tsp of ground cloves
1/4 tsp of salt
For the topping:
100g of marzipan
500g of white fondant
1 tbsp of apricot jam
1 tsp of water
Instructions
1. Prepare the fruit mixture
In a large mixing bowl, combine the dried fruit, grated apple, orange zest and juice, and lemon zest and juice. Stir well and let it sit for at least an hour to allow the fruit to soak up the juices.
2. Make the cake batter
Preheat your oven to 150°C and line a 20cm round cake tin with parchment paper. In a separate mixing bowl, cream together the butter and brown sugar until light and fluffy. Gradually add in the beaten eggs and vanilla extract, mixing well after each addition.
In another bowl, sift together the flour, baking powder, cinnamon, ginger, nutmeg, cloves, and salt. Slowly add this dry mixture to the wet mixture, mixing until well combined.
