  • Tomato: 2 medium-sized (finely chopped)
  • Ginger: 1-inch piece (finely chopped)
  • Garlic: 4-5 cloves (finely chopped)

  • Cumin seeds: 1 tsp
  • Coriander seeds: 1 tbsp
  • Cloves: 4-5
  • Cinnamon stick: 1-inch piece
  • Black peppercorns: 1 tsp
  • Red chili powder: 1 tsp
  • Turmeric powder: 1/2 tsp
  • Garam masala powder: 1 tsp
  • Kasuri methi: 1 tbsp

Method:

  1. Prepare the spice mix: In a pan, dry roast the cumin seeds, coriander seeds, cloves, cinnamon stick, and black peppercorns until fragrant. Let it cool down and then grind it into a fine powder.
  2. Cook the chickpeas: In a pressure cooker, add the soaked chickpeas along with 3 cups of water and a pinch of salt. Pressure cook for 4-5 whistles or until the chickpeas are cooked and soft.
  3. Prepare the gravy: In a separate pan, heat some oil and add the chopped onions. Sauté until they turn translucent. Then, add the ginger, garlic, and green chilies. Cook for a minute and then add the chopped tomatoes. Cook until the tomatoes turn mushy.
  4. Add the spice mix: Add the spice mix that we prepared earlier to the pan and mix well. Cook for 2-3 minutes until the raw smell of the spices goes away.
  5. Add the cooked chickpeas: Drain the water from the pressure cooker and add the cooked chickpeas to the pan. Mix well and let it cook for 5-7 minutes.
  6. Final touches: Add the lemon juice and kasuri methi to the pan and mix well. Let it cook for another 2-3 minutes. Garnish with coriander leaves and turn off the heat.
