  • 2 live lobsters (about 1-1.5 pounds each)
  • 1 tablespoon cornstarch
  • 1 tablespoon shaoxing wine (or dry sherry)

  • 1/4 teaspoon white pepper powder

2. Marinate the lobster

In a small bowl, mix together cornstarch, shaoxing wine, soy sauce, sugar, salt, and white pepper powder. Use this mixture to marinate the lobster halves for about 10 minutes.

3. Prepare the sauce

In a separate bowl, mix together oyster sauce, soy sauce, shaoxing wine, sugar, and chicken broth. Set aside.

In a large skillet or wok, heat vegetable oil over high heat. Add the lobster halves, flesh side down, and cook for about 2 minutes. Flip them over and cook for another 2 minutes. Remove the lobster halves from the skillet and set aside.
