- 8 ounces of dried rice noodles

- 1/4 teaspoon of black pepper

Instructions:

1. Begin by soaking the dried rice noodles in hot water for 15-20 minutes, until they become soft. Drain and set aside.
2. In a wok or large pan, heat 1 tablespoon of vegetable oil over medium-high heat. Add in the minced garlic and diced onion, and cook until fragrant.
3. Add in the sliced carrots, bell peppers, mushrooms, and bok choy, and stir-fry for 2-3 minutes.
4. Next, add in the drained rice noodles and continue to stir-fry for another 2-3 minutes.
5. Drizzle in soy sauce and sprinkle in black pepper, and continue to stir-fry until all ingredients are well combined.
6. In a separate pan, heat 1 tablespoon of vegetable oil over medium-high heat. Add in the minced garlic and diced onion, and cook until fragrant.
7. Add in the dried salted fish and stir-fry for 2-3 minutes.
8. Next, add in the sliced bell peppers and bok choy, and stir-fry for another 2-3 minutes.
9. Pour in the oyster sauce and sprinkle in black pepper, and continue to stir-fry until all ingredients are well combined.
10. Serve the stir-fried rice noodles on a plate and top with the salted fish mixture.

  • 1/4 teaspoon salt
  • 1 scallion
  • 1 tablespoon oyster sauce
