The Secret to a Perfect Fried Kway Teow
Wok Hei - The key to a successful Fried Kway Teow is the smoky and charred taste that can only be achieved through high heat and a wok. The intense heat from the wok helps to seal in the flavors of the ingredients, giving it that unique smoky aroma and charred taste.
Fresh Ingredients - Another crucial element to a delicious Fried Kway Teow is the use of fresh ingredients. From the plump and juicy prawns to the crisp bean sprouts and tender strips of meat, each ingredient plays an essential role in creating the perfect balance of flavors.
Special Sauce Blend - The secret sauce blend used in this recipe is what sets it apart from others. The combination of sweet, salty, and tangy flavors from the dark soy sauce, oyster sauce, and chili paste creates a harmonious blend that enhances the overall taste of the dish.
The Recipe
Ingredients:
500g fresh flat rice noodles
200g fresh prawns, peeled and deveined
150g chicken breast, thinly sliced
3 cloves of garlic, minced
2 eggs, beaten
100g bean sprouts
2 stalks of Chinese chives, cut into 2-inch lengths
3 tablespoons dark soy sauce
2 tablespoons oyster sauce
1 tablespoon chili paste
3 tablespoons vegetable oil
Instructions:
Heat the wok over high heat until it starts to smoke. Add 2 tablespoons of oil and swirl it around to coat the wok.
Add the minced garlic and stir-fry until fragrant.
Add the prawns and chicken and stir-fry until they are almost cooked through.
Push the ingredients to one side of the wok and add the beaten eggs. Scramble the eggs until they are half-cooked, then mix them in with the other ingredients.
Add the noodles, followed by the dark soy sauce, oyster sauce, and chili paste. Stir-fry everything together until the noodles are evenly coated with the sauce.
Add the bean sprouts and Chinese chives, and continue to stir-fry for another minute.
Push the ingredients to one side of the wok and add the remaining tablespoon of oil to the empty side. This will help to create more heat for the final step.
Turn up the heat to high and add the noodles back to the wok, on top of the oil. Stir-fry everything together for about a minute, until the noodles are slightly charred and have absorbed all the flavors.
Remove from heat and serve hot.
