Ingredients

Marinade:

  • 1 cup soy sauce
  • 1 cup rice vinegar
  • 1/2 cup brown sugar
  • 1/2 cup water
  • 6 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon black pepper

Other:

  • 2 pounds chicken thighs, bone-in and skin-on
  • 1/4 cup vegetable oil
  • 1 onion, sliced
  • 1 cup chicken broth
  • 2 bay leaves
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Green onions, chopped for garnish

Instructions

To make this Chinese chicken adobo, start by preparing the marinade. In a bowl, mix together the soy sauce, rice vinegar, brown sugar, water, minced garlic, minced ginger, and black pepper. Place the chicken thighs in a large Ziploc bag and pour the marinade over them. Marinate in the refrigerator for at least 2 hours, or preferably overnight.

Next, heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade and reserve the marinade for later. Place the chicken skin side down in the skillet and cook for 5-6 minutes until the skin is crisp and golden brown. Flip the chicken and cook for an additional 5-6 minutes on the other side. Remove the chicken from the skillet and set aside.

In the same skillet, add the sliced onion and sauté for 2-3 minutes until softened. Pour in the reserved marinade, chicken broth, and bay leaves. Bring to a boil and then reduce heat to low. Add the chicken back into the skillet, cover, and let it simmer for 30 minutes.

After 30 minutes, remove the lid and continue to cook for an additional 15 minutes to allow the sauce to thicken. In a small bowl, mix together the cornstarch and water, then pour it into the skillet and stir until the sauce thickens.

Serve the Chinese chicken adobo over rice and garnish with chopped green onions. Enjoy the delicious blend of Chinese and Filipino flavors in every bite!
