1 kg of fresh mud crab
1 tbsp of cornstarch
1 tsp of salt
1 tsp of black pepper
2 tbsp of vegetable oil
For the chilli sauce:
2 cloves of garlic, minced
2 red chillies, thinly sliced
1 tbsp of ginger, minced
1 tsp of fermented black beans
2 tbsp of tomato ketchup
1 tbsp of dark soy sauce
1 tsp of sugar
1 tsp of sesame oil
1 cup of chicken stock
Instructions
Prepare the crab by cleaning and cutting it into pieces. In a small bowl, mix the cornstarch, salt, and black pepper. Coat the crab pieces with this mixture and set aside.
In a wok or large pan, heat the vegetable oil over medium-high heat. Add the crab pieces and stir-fry for 5 minutes until they turn red and are slightly crispy. Remove and set aside.
