Instructions
Step 1: Marinate the chicken
- In a large bowl, mix together the chicken, yogurt,ginger-garlic paste,red chili powder,turmeric powder,garam masala,coriander powder,cumin powder, and salt.
- Cover and refrigerate for at least 2 hours or overnight for best results.
Step 2: Prepare the rice
- Wash the basmati rice and soak it in water for 30 minutes.
- In a pot, bring 6-7 cups of water to a boil.
- Add the cumin seeds,cloves,cardamom pods,cinnamon sticks,bay leaf, and salt.
- Drain the soaked rice and add it to the boiling water.
- Cook until the rice is 80% done, about 7-8 minutes.
- Drain the rice and keep aside.
Step 3: Assemble the biryani
- In a large pot, heat ghee and fry the onions until golden brown.
- Remove half of the fried onions and set aside for garnish.
- To the remaining onions in the pot, add the marinated chicken,slit green chilies,mint leaves, and coriander leaves.
- Cook for 10-12 minutes, stirring occasionally.
- In a small bowl, mix together milk,saffron, and rose water.
- Spread half of the cooked chicken in a layer at the bottom of the pot.
- Top it with half of the cooked rice.
- Drizzle half of the saffron milk mixture on top.
- Repeat the layers with the remaining chicken, rice, and saffron milk.
- Top with the reserved fried onions.
- Cover the pot with a tight-fitting lid and cook on low heat for 15-20 minutes.
- Once done, let the biryani rest for 10 minutes before serving.
Step 4: Serve and enjoy
- Gently fluff the rice with a fork before serving.
- Garnish with some more fried onions,mint leaves, and coriander leaves.
