Ingredients:
For the soup:
1 pound dried black beans
1 tablespoon olive oil
1 pound smoked sausage, sliced
1 large onion, chopped
3 cloves garlic, minced
2 carrots, peeled and chopped
2 celery stalks, chopped
1 red bell pepper, chopped
4 cups chicken or vegetable broth
2 cups water
2 bay leaves
Salt and pepper to taste
For the garnish:
1/4 cup chopped fresh parsley
1/4 cup chopped green onions
1/4 cup shredded Parmesan cheese
Instructions:
In a large pot, cover the black beans with water and let them soak overnight. Drain and rinse the beans before using.
In the same pot, heat the olive oil over medium-high heat. Add the sausage and cook until browned, about 5 minutes. Remove the sausage and set aside.
Add the onion and garlic to the pot and cook until softened, about 3 minutes.
Stir in the carrots, celery, and red bell pepper and cook for another 3 minutes.
Add the black beans, sausage,broth,water,bay leaves, and salt and pepper to the pot. Bring to a boil, then reduce the heat and let it simmer for about 1 hour, or until the beans are tender.
Remove the bay leaves and use an immersion blender to blend the soup until smooth. If you don't have an immersion blender, you can use a regular blender in batches.
Return the soup to the pot and heat it through.
Garnish with parsley, green onions, and Parmesan cheese before serving.
