1/2 tsp garam masala powder
Salt to taste
2 tbsp vegetable oil
Optional Ingredients:
1/4 tsp amchur powder (dry mango powder)
1/4 tsp chaat masala
1/4 tsp kasuri methi (dried fenugreek leaves)
Instructions:
Wash the okra and pat it dry. Cut off the tops and tails of the okra and slice them into thin pieces.
In a pan, heat the oil over medium-high heat. Add the cumin seeds and let them splutter.
Add the chopped onions and sauté until they turn translucent.
Add the minced garlic and ginger and sauté for a minute.
Add the chopped tomatoes and green chillies and cook until the tomatoes are softened.
Add the spices - coriander powder, turmeric powder, red chilli powder, garam masala powder, and salt. Mix well.
Add the sliced okra and mix it with the spices. Cover the pan and let it cook for 5-7 minutes, stirring occasionally.
Remove the cover and let the bhindi sabzi cook for another 5-7 minutes, stirring occasionally. If the okra starts to stick to the bottom of the pan, add a splash of water.
Once the okra is cooked and the spices are well incorporated, add the optional ingredients - amchur powder, chaat masala, and kasuri methi. Mix well and cook for another minute.
