Ingredients:
For the masala paste:
2 large red bell peppers, roasted and peeled
1 medium-sized onion, roughly chopped
2 cloves of garlic
1 inch piece of ginger
1 green chili
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala
For the curry:
2 tablespoons vegetable oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1/2 teaspoon fenugreek seeds
1 onion, finely chopped
1/4 teaspoon asafoetida
1/2 teaspoon turmeric powder
2 medium-sized tomatoes, chopped
Salt to taste
1/2 cup water
1/4 cup coconut milk
Fresh coriander leaves for garnish
Instructions:
Roast the red bell peppers by placing them on a gas stove or under a broiler until the skin is charred. Place them in a bowl and cover with a lid for 5 minutes. This will help in removing the skin easily. Peel off the skin, remove the seeds and chop the bell peppers roughly.
In a pan, dry roast the cumin seeds and coriander seeds until fragrant. Grind them with the roasted bell peppers, onion, garlic, ginger, green chili, turmeric powder, and garam masala to make a smooth paste. Set aside.
In the same pan, heat vegetable oil and add the mustard seeds, cumin seeds, and fenugreek seeds. Once they start to sizzle, add the chopped onion and sauté until translucent.
Add the asafoetida, turmeric powder and sauté for a few seconds. Then, add the chopped tomatoes and cook until they are soft and mushy.
Add the ground masala paste and cook until the oil separates from the sides of the pan.
Add salt to taste and pour in the water. Bring it to a boil and then simmer for 5 minutes.
Finally, add the chopped bell peppers and simmer for 10 minutes until the curry thickens and the bell peppers are cooked but still retain their crunch.
Finish off the dish by adding coconut milk and gently stirring it in. Garnish with fresh coriander leaves and serve hot with rice or naan.
This bell pepper Indian recipe is a great way to incorporate more vegetables into your diet without compromising on taste. The roasted bell peppers add a smoky and slightly sweet flavor to the dish while the spices give it a delicious kick. The addition of coconut milk adds a creamy texture and balances out the heat from the spices. Try this dish for a nutritious, flavorful, and colorful meal that will surely impress your taste buds!
