Ingredients

For the filling:

  • 1 pound of beef, thinly sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon cornstarch
  • 1 teaspoon sugar
  • 1 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 1 cup bean sprouts
  • 1 cup sliced mushrooms
  • Salt to taste

For the spring roll wrapper:

  • 1 ½ cups all-purpose flour
  • 1 ½ cups water
  • ½ teaspoon salt
  • 1 tablespoon vegetable oil

Instructions

Step 1: Prepare the filling

In a mixing bowl, combine the thinly sliced beef with soy sauce, oyster sauce, rice vinegar, minced garlic, minced ginger, cornstarch, sugar, and black pepper. Mix well and set aside to marinate for 15-20 minutes.

In a separate pan, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated beef and stir-fry for 3-4 minutes until it is cooked through. Remove the beef from the pan and set aside.

In the same pan, add shredded cabbage, shredded carrots, bean sprouts, and sliced mushrooms. Stir-fry for 2-3 minutes until the vegetables are slightly softened. Season with salt to taste and remove from heat.

Step 2: Prepare the spring roll wrapper

In a mixing bowl, combine all-purpose flour, water, salt, and vegetable oil. Mix until a smooth batter is formed.

Heat a non-stick pan over medium heat. Pour ¼ cup of the batter onto the pan and swirl it around to form a thin, even layer. Cook for 1-2 minutes until the edges start to lift. Flip the wrapper and cook for an additional 1-2 minutes until lightly browned. Repeat with the remaining batter to make 8-10 wrappers.

Step 3: Assemble and cook the spring rolls

Place a spring roll wrapper on a clean surface. Add a spoonful of the beef filling onto one corner of the wrapper. Top with a spoonful of the vegetable filling. Fold the corner over the filling, then fold in the sides and roll tightly to seal the spring roll. Repeat with the remaining wrappers and filling.

Heat vegetable oil in a pot over medium-high heat. Once hot, carefully add the spring rolls and fry for 4-5 minutes until golden brown and crispy. Remove from the oil and place on a paper towel to drain excess oil.
