Ingredients:
For the Swiss Roll:
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
4 eggs
1 cup granulated sugar
1 teaspoon vanilla extract
1/4 cup milk
2 tablespoons unsalted butter, melted
1/4 cup cocoa powder
Confectioners' sugar for dusting
For the Baked Alaska:
1 Swiss roll
1 pint of your favorite ice cream
4 egg whites
1/4 teaspoon cream of tartar
1/2 cup granulated sugar
1/2 teaspoon vanilla extract
Instructions:
To make the Swiss roll:
Preheat your oven to 350°F (175°C) and line a 10x15 inch jelly roll pan with parchment paper.
In a small bowl, whisk together the flour, baking powder, and salt.
In a separate bowl, beat the eggs and granulated sugar together until light and fluffy.
Add in the vanilla extract and milk, and mix until well combined.
Gently fold in the dry ingredients into the egg mixture, being careful not to overmix.
Once combined, pour in the melted butter and mix until fully incorporated.
Remove 1/3 of the batter and mix in the cocoa powder until well combined.
Pour the cocoa batter into one side of the prepared pan and the plain batter into the other side.
Using a knife or spatula, gently swirl the batters together to create a marbled effect.
Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let cool for 5 minutes.
Dust a clean kitchen towel with confectioners' sugar and carefully transfer the cake onto it.
Gently roll the cake, starting from one of the short ends, into a tight spiral.
Let cool completely on a wire rack.
To assemble the Baked Alaska:
Line a small bowl with plastic wrap, leaving enough overhang to cover the ice cream.
Scoop the ice cream into the lined bowl, pressing it down to create an even layer.
Cover with the plastic wrap and freeze for 30 minutes.
Once the ice cream has hardened, remove it from the bowl and place it on top of the Swiss roll.
Wrap the Swiss roll and ice cream with plastic wrap, pressing down gently to create a smooth surface.
Place in the freezer for at least 2 hours, or until ready to serve.
When ready to serve, preheat your oven to 475°F (245°C).
In a large bowl, beat the egg whites and cream of tartar until soft peaks form.
Add in the granulated sugar and vanilla extract, continuing to beat until stiff peaks form.
Remove the Baked Alaska from the freezer and remove the plastic wrap.
Place the Baked Alaska on a baking sheet and cover it completely with the meringue, making sure to seal the edges.
Bake for 5-7 minutes, or until the meringue is golden brown.
Remove from the oven and serve immediately.
