Ingredients You'll Need

For the Cake:

  • 300g of all-purpose flour
  • 1 tsp of baking powder
  • ½ tsp of baking soda
  • 1 tsp of cinnamon
  • ½ tsp of ground ginger
  • ¼ tsp of nutmeg
  • ½ tsp of salt
  • 200g of unsalted butter, softened
  • 200g of granulated sugar
  • 4 eggs, room temperature
  • 1 tsp of vanilla extract
  • 100g of chopped dried fruits (such as raisins, cranberries, apricots, etc.)
  • 100g of chopped nuts (such as walnuts, almonds, pecans, etc.)
  • 100g of mixed peel

For the Decoration:

  • 500g of marzipan
  • 500g of white fondant
  • 1 tbsp of apricot jam
  • 1 tbsp of brandy
  • Red and green food coloring
  • Christmas-themed decorations (such as holly leaves, snowflakes, etc.)

Instructions

1. Preheat Your Oven and Prepare the Pan

Preheat your oven to 150°C (300°F) and line a 20cm round cake tin with parchment paper.

2. Make the Cake Batter

In a medium-sized bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. In a separate large bowl, beat the butter and sugar together until light and fluffy. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, followed by the dry ingredients. Mix until just combined. Fold in the dried fruits, nuts, and mixed peel.

3. Bake the Cake

Pour the batter into the prepared pan and smooth the surface with a spatula. Bake for 1 hour and 45 minutes to 2 hours, or until a toothpick inserted into the center comes out clean. Let the cake cool completely before decorating.

4. Decorate the Cake

Roll out the marzipan and fondant on a clean, lightly floured surface to about 5mm (1/4 inch) thickness. Combine the apricot jam and brandy in a small bowl and brush it over the top and sides of the cake. Carefully place the marzipan on top of the cake and smooth it out. Repeat with the fondant. Use the food coloring to tint some of the fondant red and green, and use it to decorate the cake as desired. Add the Christmas decorations on top.
