4eggs, room temperature
1 tsp of vanilla extract

100g of mixed peel
For the Decoration:
500g of marzipan
500g of white fondant
1 tbsp of apricot jam
1 tbsp of brandy
Red and green food coloring

Instructions
1. Preheat Your Oven and Prepare the Pan
Preheat your oven to 150°C (300°F) and line a 20cm round cake tin with parchment paper.
2. Make the Cake Batter
In a medium-sized bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. In a separate large bowl, beat the butter and sugar together until light and fluffy. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, followed by the dry ingredients. Mix until just combined. Fold in the dried fruits, nuts, and mixed peel.
3. Bake the Cake
