Portuguese Pork Stew

Ingredients

• 4 tablespoons olive oil
• 6 1/2 cups pork stewing, diced
• 3 garlic cloves crushed
• 4 onions finely chopped
• 2 1/3 cups tomatoes peeled and diced
• herbs sage, thyme, bay leaves, marjoram
• 1 1/3 cups dry white wine
• 2 2/3 cups waxy potatoes small
• 6 1/2 cups clams venus, or mixed mussels, rinsed in cold salt water
• 1 1/3 cups scallops shells removed
• 2 tablespoons parsley chopped, to garnish, optional
