Easy Peasy Christmas Cake

Ingredients

• 1 1/8 cups softened butter
• 1 3/4 cups soft brown sugar light
• 2 3/4 cups sultanas
• 2 1/4 cups raisins seedless
• 2 1/4 cups currants
• 9/16 cup ground almonds
• 4 3/8 ounces mixed peel diced
• 1 1/16 cups glace cherries
• 3 large eggs
• 3 3/8 tablespoons sherry or apple juice if you want to make this alcohol free
• 1 golden syrup very heaped tablespoon
• 2 cups flour self-raising
• 1 teaspoon canela
• 1 teaspoon mixed spice
• 1 teaspoon nutmeg
• marmalade
• apricot jam
• marzipan Ready-rolled
• icing Ready-rolled white
