Abuelo’s Mexican Restaurant Chicken Tortilla Soup

Ingredients

• 1 tablespoon butter oil
• 1 yellow onion diced
• 3 cloves garlic minced
• 2 cans diced tomatoes with juice no salt added
• 2 tablespoons cumin
• 1 1/2 tablespoons sea salt
• 2 teaspoons freshly ground black pepper
• 2 teaspoons cayenne pepper
• 1 pound chicken breasts trimmed and butterflied
• 2 low sodium chicken broth cartons
• 1 avocado peeled, pit removed, and diced, to serve
• mexican blend cheese Shredded Cheddar Cheese, or other Cheese, of choice, for serving
• sour cream for serving
• tortilla strips for serving
