- 1 bay leaf
- 3 teaspoons spice mix garam masala, divided
- 1 1/2 teaspoons ground coriander
- 3/4 teaspoon ground cumin
- 1/2 teaspoon crushed red pepper flakes more or less to taste
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground cardamom each, ground cloves, ground nutmeg, and ground fenugreek
- 1 cup low sodium beef broth
- 28 ounces tomato sauce
- 2 tablespoons tomato paste
- 2 teaspoons brown sugar or coconut palm sugar, more or less to taste
- 1 tablespoon lemon juice
- 3/4 cup heavy cream
- 1/4 cup chopped parsley fresh, or cilantro, plus more for garnish if desired
