- 1 1/8 cups pecorino or Parmesan grated
- salt for pasta and to taste
- black pepper to taste
- 3/4 cup all purpose flour
- 7 tablespoons butter
- 1 milk
- 1 pinch salt
- 1/2 teaspoon nutmeg grated
