  • 1/2 cup coconut milk the cream on top from a full fat can OR yogurt * see note below
  • 1/4 cup water
  • 1 1/2 teaspoons pure vanilla extract
  • 1 1/2 cups carrots grated, about 3 small-medium carrots
  • 1/2 cup raisins soaked in water and drained
  • 1/3 cup walnuts toasted chopped &
  • 1/3 cup rolled oats
  • 1 1/2 tablespoons chia seeds
  • 1/2 teaspoon cinnamon
  • 1 cup non dairy milk
  • 1 carrot small, finely grated, yield: about 1/2 cup
  • 1 tablespoon pure maple syrup
  • 1/2 muffin Carrot Spice, crumbled over top
  • coconut sweetened shredded sprinkled over top
