  • 3 1/2 pounds whole chicken
  • 1 gallon water
  • 1 cup kosher salt
  • 1 teaspoon 5-spice powder
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons sugar unrefined
  • 2 teaspoons oyster sauce
  • 2 tablespoons water
  • 1 tablespoon mushroom sauce
  • 1/2 tablespoon dark soy sauce
  • 1 tablespoon wine xiao shing
  • 1/2 cup water chestnuts sliced
  • 1/2 cup bamboo shoots sliced
  • 1 bunch green onions cut into 2” lengths
  • 5 slices peeled fresh ginger
  • 11 dried shiitake mushrooms small, Reconstitute in hot water for 15-20 minutes, drain from soaking water & trim stalks
  • 1/4 cup ham sliced into ½”x 2” lengths
  • 1/4 cup chicken broth
  • 3 tablespoons regular soy sauce
  • 2 tablespoons oyster sauce
  • 2 teaspoons sugar unrefined
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons corn starch
  • 1 tablespoon water
